En M\u00e1laga se consume en sopas, cazuelas y adobado.<br \/>\nEl caldillo de pintarroja es una sopa caliente con un toque picante muy caracter\u00edstico.<\/p>\n<p>Este plato marinero lo tomaban antiguamente los pescadores al volver de faenar y poco a poco fue sirvi\u00e9ndose en las barras de casi todos los bares y tabernas de la ciudad.<br \/>\nSe sol\u00eda beber en vaso o en taza con una copita de vino blanco al lado para contrarrestar el picante. El pescado y marisco que quedaba en el fondo se com\u00eda con las manos una vez bebido el l\u00edquido.<br \/>\nHoy en d\u00eda todav\u00eda puede degustarse en mucho sitios de M\u00e1laga aunque ya en la mayor\u00eda de ellos se sirve como sopa.<br \/>\nYa sea bebido o en sopa, este caldo no deja indiferente a nadie. tomate<\/li>\n<li>1 pimiento verde.<\/li>\n<li>2 guindillas.<\/li>\n<li>Perejil<\/li>\n<li>1 hoja de laurel<\/li>\n<li>1 cucharada de comino en polvo<\/li>\n<li>2 cucharadas de piment\u00f3n dulce<\/li>\n<li>Sal y Pimienta negra molida<\/li>\n<li>Unas hebras de azafr\u00e1n o en su defecto colorante alimentario<\/li>\n<li>Aceite de oliva virgen extra (4 cucharadas soperas).<\/li>\n<li>2 una sart\u00e9n, calentamos el aceite de oliva y fre\u00edmos las almendras, el pan y los ajos pelados.<\/li>\n<li>Cuando est\u00e9n dorados (no muy fritos) se reservan y en el mismo aceite sofre\u00edmos el tomate y el pimiento cortado en dados.<\/li>\n<li>Mientras tanto en una procesadora o una batidora de mano, trituramos las almendras, ajos, pan, una ramita de perejil, el tomate, el pimiento y el agua reservada para que se ligue mejor.<\/li>\n<li>En una olla pondremos el agua a hervir reservando \u00bc de litro. Cuando empiece a hervir metemos la pintarroja, las almejas, el piment\u00f3n, el comino, las guindillas*, la hoja de laurel y sal y pimienta al gusto (luego podremos rectificar si fuera necesario)<\/li>\n<li>Despu\u00e9s de unos 5-7 minutos** vertemos lo triturado en la olla y lo dejamos cocinar dos o tres minutos m\u00e1s o hasta que la pintarroja est\u00e9 tierna***.<\/li>\n<li>Lo servimos en vaso o en plato junto a un trozo de lim\u00f3n para el que quiera. Le da un toque buen\u00edsimo!<\/li>\n<\/ol>\n<p><strong>Notas<\/strong>:<\/p>\n<p>*Dependiendo de c\u00f3mo de picante queramos el caldillo, podemos trocear las guindillas y triturarlas junto al resto de ingredientes en la batidora. De esta forma se acent\u00faa mucho el picante.<\/p>\n<p>**Es posible que durante la cocci\u00f3n se forme una espumilla blanca de la grasa e impurezas de la pintarroja y dem\u00e1s ingredientes.
