Se cree que este pesto proviene a su vez de una salsa que consum\u00edan los romanos llamada <em>moretum,<\/em> a base de queso, hierbas, ajo aceite de oliva y vinagre.<\/p>\n<p>La receta que os proponemos se basa en el pesto tradicional al que le a\u00f1adiremos las pieles escaldadas de un par de calabacines, lo que le da un sabor y textura peculiar. Es una receta sencilla que hemos hecho infinidad de veces. Para la presentaci\u00f3n y alg\u00fan a\u00f1adido hemos seguido la versi\u00f3n del gran <strong>Jordi Cruz<\/strong> que nos encanta.<\/p>\n<p>Por cierto, el vino que se ve en la foto es excelente. Es una bodega extreme\u00f1a la que elabora este tinto de 8 meses de crianza mezcla de variedades Syrah, Cabernet Sauvignon y Tempranillo.<\/p>\n<p>Nosotros lo compramos en un Supersol por 10,5\u20ac pero en internet se pueden encontrar <a href=\"https:\/\/amzn.to\/2YYrVoT\" target=\"_blank\" rel=\"noopener\">mejores precios y ofertas.<\/a><\/p>\n<\/div><\/div><\/div><div fusion-text-5\"><h3><strong>Elaboraci\u00f3n:<\/strong><\/h3>\n<ol>\n<li>Ponemos la pasta a cocer en agua hirviendo con sal. La sacaremos 1 minuto antes del tiempo que diga el paquete para estar al dente.<\/li>\n<li>En otra olla con agua hirviendo, ponemos las pieles de los calabacines y el ajo laminado durante medio minuto. En ese momento a\u00f1adimos la albahaca\u00a0 y lo dejamos todo otro medio minuto que se escalde. Reservaremos algunas hojitas peque\u00f1as de albahaca para decorar<\/li>\n<li>Lo sacamos a un bol con agua helada para cortar la cocci\u00f3n y que no se pierda el color verde.<\/li>\n<li>La carne del calabac\u00edn la cortamos en trozos de la misma longitud de los rigatoni y con un <a href=\"https:\/\/amzn.to\/3cVwQ2k\" target=\"_blank\" rel=\"noopener\">descorazonador de manzana\u00a0<\/a> sacamos \u00abrigatoni\u00bb de calabac\u00edn que luego entremezclaremos en el plato con los rigatoni de pasta (esto lo hemos sacado de la receta de Jordi Cruz)*Si no ten\u00e9is descorazonador, como en nuestro caso, pod\u00e9is utilizar los mismos rigatoni para sacar los de calabac\u00edn. La \u00fanica pega es que quedan m\u00e1s peque\u00f1os que los de pasta, como se puede ver en las fotos.<\/li>\n<li>Para hacer el pesto, metemos en el vaso de la <a href=\"https:\/\/amzn.to\/36D9U3M\" target=\"_blank\" rel=\"noopener\">batidora<\/a> la albahaca, pieles de calabac\u00edn y ajo escaldados, los pi\u00f1ones, el queso cortado en trozos y el aceite de oliva. Batimos hasta que quede con pocos grumos.<\/li>\n<li>En una sart\u00e9n, salteamos la pasta que ya estar\u00e1 lista junto con los \u00abrigatoni\u00bb de calabac\u00edn un par de minutos para que cojan temperatura. A\u00f1adimos entonces unas cuatro o cinco cucharadas soperas de pesto a la sart\u00e9n y saltearemos otro par de minutos m\u00e1s hasta que todo se integre bien.<\/li>\n<li>Pacer la teja de parmesano, en una buena sart\u00e9n antiadherente caliente, rallamos una tira de queso dejando que este se derrita sin llegar a quemarse. Cuando est\u00e9 bien derretido la apartamos del fuego y soplamos para enfriar la teja y que endurezca (Tambi\u00e9n sacado de la receta de Jordi Cuz) Si no quer\u00e9is complicaros, la receta ya estar\u00eda simplemente rallando el queso en el plato.<\/li>\n<li>Para el emplatado de Jordi Cruz, alternaremos rigatoni de pasta con los de calabac\u00edn formando una torre.
