O la porra blanca del restaurante Arte de Cozina en Antequera, donde han recuperado la antigua receta de la porra y el salmorejo cuando, siglos atr\u00e1s, no se incorporaba el tomate (porque a\u00fan no lo hab\u00edan tra\u00eddo de las am\u00e9ricas)<\/span><\/p>\n<p><span class=\"\">Lo cierto es que el salmorejo y la porra se diferencian muy poco entre s\u00ed y que en cada uno de los 115 pueblos existentes que separan Antequera de C\u00f3rdoba se hace con un estilo propio. Pero hay\u00a0<\/span><strong><span class=\"\">un factor clave: la importancia del pan y el tomate<\/span><\/strong><span class=\"\">\u00a0en ambos platos.<\/span><\/p>\n<p>Por eso, en cada pueblo andaluz se elabora con una personalidad diferente que viene marcada por la calidad y madurez del tomate o las caracter\u00edsticas del pan (con m\u00e1s o menos corteza, humedad o cantidad de migas por ejemplo), as\u00ed como el tipo de aceite y variedad de aceituna con que se ha elaborado. donde la diferencia radica en el uso de\u00a0<strong>zanahorias<\/strong> , una verdura que nunca forma parte del plato antequerano.<\/p>\n<p>Dependiendo de cada paladar, preferencia de sabor e ingredientes utilizados (pan \/ tomate), se puede servir m\u00e1s cremoso o l\u00edquido.\u00a0Tambi\u00e9n es muy habitual servirlo junto con unas anchoas marinadas en vinagre o \u201cescabeche\u201d, que le da el toque mediterr\u00e1neo de M\u00e1laga.<\/p>\n<p>Curiosamente, el origen de la palabra Zoque proviene del t\u00e9rmino \u00e1rabe\u00a0<em>suqat<\/em>\u00a0, que significa desperdicio u objetos sin valor.\u00a0Definici\u00f3n referente al pan duro utilizado en esta sopa: <strong>el zoque era (y es) una buena forma de reciclarlo.<\/strong><\/p>\n<\/div><div
