Y es, tambi\u00e9n, uno de los m\u00e1s demandados por malague\u00f1os y turistas.<\/p>\n<p>Aunque se pueden encontrar todo el a\u00f1o, se dice que tienen especial sabor \u2018de virgen a virgen\u2019, es decir, entre el 16 de julio que se celebra la Virgen del Carmen y el 8 de septiembre que se honra a la Virgen de la Victoria.<\/p>\n<p>Hay quien ampl\u00eda el plazo a aquellos meses que no lleven en una erre en su nombre: de mayo a agosto. Lo que est\u00e1 claro que los meses veraniegos son los ideales para el espeto, ya que en ese periodo las sardinas tienen un poco m\u00e1s de grasa que hace aumentar su rico sabor.<\/p>\n<p>A todo ellos se suma su bajo precio (de 2 a 6 euros) y su gran conjugaci\u00f3n con bebidas refrescantes como una ca\u00f1a de cerveza, una sangr\u00eda o un tinto de verano con hielo, lo que hace que el espeto sea un manjar en cualquier chiringuito de la costa malague\u00f1a. No se compone m\u00e1s que de unas cuantas sardinas asadas al calor de la le\u00f1a ensartadas en una ca\u00f1a. As\u00ed de simple.<\/p>\n<p>Hay que tener en cuenta que tambi\u00e9n se puede espetar otro tipo de pescados (lubina o dorada, por ejemplo) y tambi\u00e9n un rico calamar.<\/p>\n<\/div><div de sardinas y, para realizarlos, son unos cuantos los secretos que hacen de este plato la delicia de cualquiera.<\/p>\n<p>Mantener las sardinas en agua con hielo antes de espetarlas es una de las primeras recomendaciones de los m\u00e1s expertos para mantener el pescado en condiciones \u00f3ptimas y para que tenga resistencia a la hora de ensartar la ca\u00f1a.<\/p>\n<p>Es preferible usar<strong>\u00a0sardinas de tama\u00f1o medio-grande<\/strong>, que son las que mejor sabor tienen: las muy grandes no se cocinan bien y las peque\u00f1as quedan muy secas r\u00e1pidamente.<\/p>\n<p><strong>La ca\u00f1a espec\u00edfica es la vegetal<\/strong>, obtenida de los arroyos que dan al mar, aunque a veces tambi\u00e9n se usan unas hechas de habitual hacer en viejas barcas rellenas de arena de playa, se debe hacer con le\u00f1a que se consuma lentamente y mantenerlo con llama baja, sin demasiada fuerza.<\/p>\n<p>Se recomienda siempre el uso de\u00a0<strong>madera de olivo<\/strong>, especialmente de su ra\u00edz, por su lenta combusti\u00f3n.<\/p>\n<p>Una vez est\u00e1 todo preparado, llega el momento m\u00e1s importante: el arte de espetar. Hay que\u00a0<strong>introducir la ca\u00f1a por el lomo de la sardina<\/strong>, siempre por debajo de la espina, para que el pez no se caiga.
